It’s only the second week of January and I’ve already flubbed by skipping my meal prep day, Sunday. I was headed to the office sans lunch, which meant it would be a to-go lunch kind of day. I’d planned on prepping a brown rice taco bowl with shrimp, so I wanted something similar to help me stay on track.
Queue ClusterTruck—If you haven’t heard of ClusterTruck, chances are you’ve been living under a rock. It’s a fast, friendly food delivery service that is seriously changing the game. Typically, food delivery service comes with a side of soggy fries, wilted lettuce, melted milk shakes, and other food infractions. Not to mention the pricey delivery fees.
ClusterTruck is doing delivery different by providing fast, fresh meals that are still piping hot when they get to you. It’s a kitchen and delivery service all rolled into one, no middle man. They promise “nothin’ soggy, nothin’ cold” and they have some impressive software to back it up.
After browsing the menu, I finally landed on the Mexican Rice Bowl and it did not disappoint. This rice bowl was a flavor explosion that packed a punch with tomato garlic rice, black beans, pico de gallo, charred corn salsa, and guacamole topped with lime crema and pickled sweet onion. If I had to describe this bowl in one word…I couldn’t. It was fresh, it was flavorful, and it was filling. The pickled onions and guacamole were the shining stars of this dish; it was just what I needed to fuel the rest of my work day.
